Ingredients:
1 lb taro root, peeled and cubed
1 lb octopus, cleaned and cut into bite-sized pieces
1 onion, diced
2 cloves of garlic, minced
1 can of coconut milk
1 cup of water
2 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp paprika
Steamed taro leaves, for serving
Instructions:
Heat the olive oil in a pot over medium heat. Add the onion and garlic and sauté until softened.
Add the octopus to the pot and cook for about 5 minutes, or until it starts to turn pink.
Add the taro, coconut milk, water, salt, black pepper, and paprika to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 25 minutes, or until the taro is tender.
Serve the stew hot, over steamed taro leaves.
Note: This is a traditional Samoan recipe, but you can also make some variations by adding other vegetables such as carrots, green beans, or eggplants. And also you can add some heat by adding some diced chilies.
