Ingredients:
1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 tsp salt
2 tbsp butter, melted
2 tbsp sugar
1 orange, zest and juice
1/4 cup Grand Marnier
2 tbsp butter
Instructions:
In a large mixing bowl, combine the flour, eggs, milk, water, salt, and melted butter. Whisk until the batter is smooth and free of lumps.
Heat a non-stick skillet or crepe pan over medium-high heat. Pour about 1/4 cup of batter into the pan and tilt to evenly coat the bottom of the pan. Cook the crepe for about 1-2 minutes on each side, or until golden brown. Repeat with the remaining batter to make 8-10 crepes.
In a small saucepan, combine the sugar, orange zest, orange juice, and Grand Marnier. Bring to a boil over medium heat, and then reduce the heat to low and simmer for about 5 minutes, or until the mixture thickens slightly.
In a large skillet, melt the butter over medium heat. Dip each crepe into the orange sauce and then fold it into quarters. Place the crepes in the skillet and cook for about 1-2 minutes on each side, or until they are heated through and slightly caramelized.
To serve, place 2 crepes on each plate and drizzle with any remaining orange sauce. Garnish with a sprinkle of powdered sugar and a twist of orange zest. Enjoy while the crepes are still warm.
