Ingredients:
1 lb of black beans
1 lb of pork belly
1 lb of pork shoulder
1 lb of beef (chuck or round)
1 lb of smoked sausage
1 lb of bacon
1 onion, chopped
2 cloves of garlic, minced
2 bay leaves
2 cups of water
Salt and pepper, to taste
Orange wedges, for serving
Rice, for serving
Collard greens, for serving
Instructions:
Start by soaking the black beans overnight in water. Drain and rinse the beans before cooking.
In a large pot, add the pork belly, pork shoulder, beef, smoked sausage, bacon, onion, garlic, bay leaves, and water. Bring to a boil, then reduce the heat to low and simmer for 2-3 hours, or until the meat is tender.
Add the black beans to the pot and continue to simmer for another hour, or until the beans are soft.
Season with salt and pepper to taste.
Serve the Feijoada with orange wedges, rice, and collard greens.
