Ingredients:
2 lbs of lamb or mutton, cut into bite-sized pieces
2 cups of water
2 cups of beef broth
2 cups of Guiness
4 tbsp of butter
2 onions, chopped
4 cloves of garlic, minced
2 cups of baby carrots
4 potatoes, peeled and diced
1 tbsp of fresh thyme, chopped
2 bay leaves
1 tsp of salt
1 tsp of black pepper
1 cup of grated cheddar cheese
Instructions:
Heat the butter in a large pot or Dutch oven over medium heat.
Add the onions and garlic and sauté for 2-3 minutes, or until the onions are translucent.
Add the lamb or mutton and brown on all sides.
Pour in the water, beef broth, and Guiness and bring to a simmer.
Add the carrots, potatoes, thyme, bay leaves, salt, and pepper.
Bring to a boil, then reduce the heat to low and simmer, covered for about 2 hours or until the meat is tender.
Remove the bay leaves and thyme branches before serving.
Serve with mashed potatoes or bread and sprinkle grated cheddar cheese on top.
