Ingredients:
4-5 lb whole chicken, cut into pieces
2 cups all-purpose flour
2 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
2 eggs, beaten
2 cups buttermilk
1/2 cup bacon grease, melted
Instructions:
In a large bowl, whisk together the flour, paprika, garlic powder, onion powder, thyme, salt, and pepper.
In a separate bowl, beat the eggs and mix in the buttermilk.
Dip each piece of chicken into the flour mixture, shaking off any excess. Then dip the chicken into the egg and buttermilk mixture, then back into the flour mixture.
Heat the bacon grease in a large cast-iron skillet or Dutch oven to 350°F.
Carefully place the chicken pieces into the hot bacon grease and fry for about 12-15 minutes per side, or until the chicken is golden brown and cooked through.
Remove the chicken from the grease and drain on a wire rack or paper towels.
Serve the chicken warm, with your favorite dipping sauce.
