Senegalese: Maffe Tiga
Ingredients:
2 lbs beef or lamb, cut into bite-size pieces
1 onion, finely chopped
2 cloves garlic, minced
1 tsp ginger, grated
1 tbsp tomato paste
1 can (14 oz) diced tomatoes
1 cup beef or chicken broth
1 cup peanut butter
1 cup water
2 tbsp vegetable oil
Salt and pepper, to taste
1 tsp cumin
1 tsp paprika
1 tsp ground coriander
1 tsp ground chili pepper
1 tsp ground cinnamon
1 cup cooked jasmine rice, for serving
Instructions
Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger and sauté until softened, about 5 minutes.
Add the beef or lamb and brown on all sides, about 8-10 minutes.
Stir in the tomato paste, diced tomatoes, beef or chicken broth, peanut butter, water, cumin, paprika, coriander, chili pepper, and cinnamon.
Bring to a simmer, then reduce heat and cover. Cook until the meat is tender, about 1 hour.
Season with salt and pepper to taste.
Serve over cooked jasmine rice.
