Ingredients:
8 oz of dangmyeon (sweet potato noodles)
1/4 cup of soy sauce
2 tbsp of sugar
2 tbsp of sesame oil
2 tbsp of vegetable oil
1/4 cup of sliced onion
1/4 cup of sliced bell pepper
1/4 cup of sliced mushrooms
1/4 cup of sliced carrots
1/4 cup of sliced green onion
1/4 cup of sliced beef (optional)
1 tbsp of sesame seeds
Instructions:
Soak the dangmyeon in warm water for 30 minutes, or until they are soft and pliable. Drain and rinse under cold water.
In a small bowl, mix together the soy sauce, sugar, and sesame oil.
Heat the vegetable oil in a large skillet or wok over high heat. Add the onion, bell pepper, mushrooms, and carrots and stir-fry for 2-3 minutes, or until the vegetables are slightly softened.
Add the beef, if using, and stir-fry for an additional 2-3 minutes, or until it is cooked through.
Add the dangmyeon to the skillet and pour the soy sauce mixture over the top. Stir-fry for 2-3 minutes, or until the noodles are coated and the vegetables and beef are well mixed.
Stir in the green onions and sesame seeds and cook for an additional 1-2 minutes.
Serve Japchae hot or at room temperature.
