Ingredients:
2 lbs of beef or lamb, cut into small cubes
1 onion, finely chopped
2 cloves of garlic, minced
2 tbsp of berbere spice mix
1 tbsp of tomato paste
1 tbsp of niter kibbeh (Ethiopian spiced clarified butter)
2 cups of sliced vegetables (such as bell peppers, tomatoes, and onions)
Salt and pepper, to taste
Injera bread, for serving
Instructions
In a large pan, heat the niter kibbeh over medium heat.
Add the onions and garlic and sauté until softened.
Add the berbere spice mix and tomato paste and stir to combine.
Add the meat and toss to coat in the spice mixture. Cook until the meat is browned.
Add the sliced vegetables and sauté for 2-3 minutes, until they begin to soften.
Season with salt and pepper to taste.
Serve the tibs on top of injera bread, and enjoy!
