Senegalese: Mafé
Ingredients:
2 cups ground peanuts
1 onion, chopped
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 cups water
2 cups beef or chicken broth
2 cups diced carrots, sweet potatoes, or eggplant
1 pound beef, lamb, or chicken, cut into small chunks
1/4 cup tomato paste
1/4 cup chopped fresh cilantro
Instructions
In a large pot, sauté the onions and garlic in a bit of oil until softened.
Add the ground peanuts, salt, and cayenne pepper and stir to combine.
Slowly add the water and broth, stirring constantly to prevent lumps from forming.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for 10-15 minutes.
Add the diced vegetables and meat, and stir well to combine.
Add the tomato paste and stir until everything is well combined.
Bring the stew back to a simmer and cook for an additional 20-25 minutes, or until the vegetables and meat are tender.
Stir in the cilantro just before serving, and adjust seasoning to taste.
Serve the Mafé over a bed of rice or couscous and garnish with additional cilantro if desired.
