Ingredients:
1/2 kg beef or pork
2 onions, chopped
3 cloves of garlic, minced
1/4 cup of olive oil
1 medium pumpkin
2 cups of beef or chicken broth
2 cups of corn kernels
2 cups of diced potatoes
1 cup of diced carrots
1 cup of diced green beans
1 cup of diced tomatoes
1/4 cup of chopped fresh parsley
Salt and pepper to taste
1 cup of grated cheese (optional)
Instructions:
Cut the pumpkin in half and remove the seeds. Cut the pumpkin into large chunks and set aside.
In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
Add the beef or pork to the pot, and brown for about 5 minutes.
Add the broth, corn kernels, potatoes, carrots, green beans, and tomatoes. Stir well.
Add the pumpkin chunks, and stir gently. Bring the mixture to a boil.
Reduce the heat to low, cover the pot and simmer for about 1 hour or until the vegetables are tender.
Season with salt and pepper to taste.
If desired, top with grated cheese before serving.
Serve in the pumpkin halves and Enjoy!
