Ingredients (crumpets):
2 cups of warm water
2 tsp of active dry yeast
1 tsp of sugar
4 cups of flour
1 tsp of salt
1 cup of warm milk
additional flour for dusting
Ingredients (tea):
Loose-leaf black tea
Water
Milk
Sugar
Instructions:
For Crumpets:
In a large mixing bowl, combine the warm water, yeast, and sugar. Stir until the yeast and sugar are dissolved. Let sit for about 10 minutes, or until the mixture becomes frothy.
In a separate bowl, combine the flour and salt.
Gradually add the flour mixture to the yeast mixture, stirring constantly. Add the warm milk and continue to stir until the dough comes together.
Knead the dough for about 5 minutes, or until it becomes smooth and elastic.
Place the dough in a greased bowl and cover with a towel. Let it rise in a warm place for about 1 hour, or until doubled in size.
Heat a griddle or large skillet over medium heat. Grease the surface with butter or oil.
Dust your work surface with flour, and turn the dough out. Roll the dough out to about 1/2 inch thickness.
Use a round cookie cutter or a glass to cut out circles of dough.
Place the dough circles on the griddle and cook for about 2-3 minutes per side, or until the crumpets are puffed and golden brown.
Remove the crumpets from the griddle and let them cool on a wire rack.
For the Tea:
Bring water to a rolling boil in a kettle or pot.
Add the loose-leaf tea to a teapot or a mug and pour the hot water over the tea.
Steep the tea for 3-5 minutes.
Strain the tea and pour into a cup.
Add milk and sugar to taste.
Enjoy your tea with your homemade crumpets.
Crumpets are typically served with butter and jam, honey or marmalade and can also be enjoyed with a variety of sweet and savory toppings such as cheese, smoked salmon, or eggs.
