Ingredients:
2 lbs of mixed meats such as chicken, beef, pork or fish
2 yucca root, peeled and diced
2 green plantains, peeled and diced
2 ears of corn, cut into 4 pieces
1 onion, diced
4 cloves of garlic, minced
1/4 cup of cilantro, chopped
2 tbsp of olive oil
Salt and pepper to taste
8 cups of chicken or beef broth
1/4 cup of sour cream
1 avocado, diced
Instructions:
In a large pot, add the meats, yucca, plantains, corn, onion, garlic, cilantro, olive oil, salt and pepper.
Pour the broth over the ingredients and bring to a boil.
Reduce the heat to medium-low and let the soup simmer for 45-50 minutes or until the meats are cooked through and the vegetables are tender.
Remove the meats from the soup and shred it.
Add the shredded meats back to the soup and stir.
Serve the soup in bowls and top with a dollop of sour cream, diced avocado and more cilantro.
