Ingredients (for the Kofta):
1 lb ground beef or lamb
1/2 cup of fine bulgur wheat
1/2 cup of finely chopped onion
1/4 cup of finely chopped parsley
2 cloves of garlic, minced
1 teaspoon of ground cumin
1 teaspoon of ground coriander
1 teaspoon of ground black pepper
Salt to taste
Ingredients (for the Sauce):
1 cup of plain yogurt
1/2 cup of finely chopped mint
1/4 cup of finely chopped parsley
2 cloves of garlic, minced
Juice of 1 lemon
Salt to taste
Ingredients (for the Garnish):
1 cup of diced tomatoes
1 cup of diced cucumber
1 cup of diced onion
1 cup of chopped parsley
Lemon wedges
Instructions
In a large bowl, mix together the ground meat, bulgur wheat, onion, parsley, garlic, cumin, coriander, black pepper, and salt.
Form the mixture into small sausage-shaped meatballs.
Preheat a grill or a grill pan over medium-high heat. Grill the kofta for about 5 minutes per side, or until cooked through.
In a separate bowl, mix together the yogurt, mint, parsley, garlic, lemon juice, and salt.
Serve the kofta with the sauce, garnished with diced tomatoes, cucumber, onion, parsley, and lemon wedges.
