Ingredients:
8 large corn tortillas
1/4 cup of refried beans
1/4 cup of shredded Oaxacan cheese or any stringy cheese
1/4 cup of cooked and shredded beef or pork
1/4 cup of shredded lettuce
1/4 cup of sliced radishes
1/4 cup of diced tomatoes
1/4 cup of diced onion
1/4 cup of crema or sour cream
1/4 cup of guacamole
1/4 cup of salsa
Instructions
Preheat a large skillet or griddle over medium-high heat.
Place one tortilla at a time in the skillet and cook for 1-2 minutes on each side, or until crispy and lightly browned.
Remove the tortilla from the skillet and place it on a plate.
Spread a thin layer of refried beans over the tortilla, leaving a border around the edges.
Sprinkle shredded cheese over the beans.
Add a spoonful of the cooked meat over the cheese.
Add shredded lettuce, radishes, tomatoes, and onion.
Drizzle crema or sour cream and guacamole over the top.
Add a spoonful of salsa over the top.
Fold the tortilla in half and press lightly to seal.
Repeat the process with the remaining tortillas.
