Ingredients:
2 cups masa harina
1 1/2 cups warm water
1/2 teaspoon salt
1/2 cup refried beans
1/2 cup cooked and shredded pork or beef
1/2 cup crumbled queso fresco or shredded cheese
1/4 cup finely chopped onion
1/4 cup finely chopped cilantro
1/4 cup finely chopped jalapeño pepper (optional)
Vegetable oil, for frying
Salsa and sour cream, for serving
Instructions:
In a large mixing bowl, combine the masa harina, warm water, and salt. Mix until a smooth dough forms.
Divide the dough into 8 equal portions.
Take one portion of the dough and flatten it into a small disc, about 1/4 inch thick. Place a spoonful of refried beans, pork or beef, cheese, onion, cilantro, and jalapeño pepper (if desired) in the center of the disc.
Fold the disc over and press the edges together to seal the filling inside. Gently press and flatten the pupusa with your hands to about 1/4 inch thickness.
Repeat with the remaining dough and filling ingredients.
Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat. Carefully place the pupusas in the skillet and cook for about 2-3 minutes on each side, or until golden brown. Drain on paper towels.
Serve the pupusas with salsa and sour cream.
Note: If you don't have Masa harina you can use corn flour, the texture will be different but still delicious.
