Ingredients:
2 large vine-ripened tomatoes, cut into wedges
1 large cucumber, peeled and sliced
1 red onion, thinly sliced
1/2 cup of Kalamata olives, pitted
1/2 cup of feta cheese, crumbled
1/4 cup of extra-virgin olive oil
2 tbsp red wine vinegar
2 cloves of garlic, minced
2 tbsp chopped fresh basil
2 tbsp chopped fresh mint
Salt and pepper, to taste
1/2 cup of marinated artichokes
1/4 cup of capers
1/4 cup of toasted pine nuts
Instructions
In a large salad bowl, combine the tomatoes, cucumber, red onion, olives, feta cheese, artichokes, and capers.
In a small bowl, whisk together the olive oil, red wine vinegar, garlic, basil, mint, salt and pepper.
Pour the dressing over the salad and toss to coat.
Sprinkle the toasted pine nuts over the top of the salad.
Serve and enjoy.
