Ingredients:
6 cups chopped greens (romaine lettuce or iceberg lettuce)
2 ripe tomatoes, diced
1 avocado, diced
6 slices of bacon, cooked and crumbled
2 cups diced cooked chicken
2 hard-boiled eggs, chopped
1/4 cup crumbled blue cheese
Red wine vinaigrette (recipe follows)
Instructions:
In a large bowl, combine the chopped greens, tomatoes, avocado, bacon, chicken, hard-boiled eggs, and blue cheese.
To make the vinaigrette, whisk together 1/2 cup red wine vinegar, 1/4 cup olive oil, 1 teaspoon Dijon mustard, 1 minced shallot, and salt and pepper to taste.
Toss the salad with the vinaigrette and serve immediately.
Note: You can also add other ingredients to your liking such as croutons, cucumbers, and/or diced red onions.
