Vietnamese cuisine is known for its use of fresh and seasonal ingredients, as well as its emphasis on light and healthy dishes. Some popular dishes in Vietnam include Pho, a dish made with rice noodles in a meat-based broth, Banh Mi, a sandwich made with a baguette filled with meat, vegetables, and herbs, and Goi Cuon, a dish made with fresh spring rolls filled with meat, seafood, and herbs. Vietnamese cuisine is also known for its use of a wide variety of herbs and vegetables, such as mint, cilantro, and lemongrass, as well as its use of a wide variety of seafood, such as shrimp and squid. 

Pho is a traditional Vietnamese noodle soup that is made from a rich and flavorful broth, cooked for several hours with different spices, beef bones, and aromatics. The broth is served with rice noodles, thinly sliced raw beef, and a variety of toppings such as bean sprouts, fresh herbs, and lime wedges. The dish is usually served with hoisin sauce and sriracha on the side, allowing each person to adjust the seasoning to their taste.  

Bahn Mi is a traditional Vietnamese sandwich made with a baguette or French bread roll, filled with a variety of ingredients such as meat, vegetables, herbs, and pickled vegetables. In this recipe, I used thinly sliced pork or chicken that was marinated in a mixture of soy sauce, fish sauce, sugar, and garlic. The meat is then grilled until cooked through, and then it is served on a baguette or French bread roll, with a spread of mayonnaise mixed with sriracha sauce or chili paste. The sandwich is also filled with cucumber, jalapenos, cilantro, mint, pickled carrots, and daikon. 

Goi Cuon is a traditional Vietnamese dish made of fresh vegetables and meat wrapped in rice paper wrappers. The wrappers are dipped in warm water to soften them, before adding ingredients such as shrimp, pork or chicken, carrots, cucumber, lettuce, mint, cilantro, basil and rice vermicelli noodles. The rolls are then tightly wrapped and served with a dipping sauce made of hoisin sauce, sweet chili sauce, soy sauce and minced garlic.
