Ingredients:
1 lb of sirloin steak, cut into thin strips
2 tbsp of vegetable oil
1 onion, sliced
2 cloves of garlic, minced
2 tomatoes, diced
1/4 cup of soy sauce
2 tbsp of red wine vinegar
2 tbsp of aji amarillo paste or 1 red pepper flakes
1 tsp of ground cumin
1 tsp of dried oregano
Salt and pepper, to taste
2 cups of french fries, fried
Fresh cilantro, for garnish
white Rice
Instructions:
In a large skillet, heat the oil over high heat. Add the beef and cook for 2-3 minutes, or until browned on all sides. Remove the beef from the skillet and set aside.
In the same skillet, add the onions and garlic and sauté for 2-3 minutes, or until softened.
Add the tomatoes, soy sauce, red wine vinegar, aji amarillo paste or red pepper flakes, cumin, oregano, salt and pepper, and stir to combine.
Add the beef back to the skillet and stir to coat the beef in the sauce. Cook for 2-3 minutes, or until the beef is heated through.
Add the french fries to the skillet and stir to combine. Cook for an additional 2-3 minutes, or until the fries are heated through.
Serve the lomo saltado over white rice and garnish with cilantro.
