Ingredients:
1 lb of Chinese wheat noodles (such as lo mein or somen)
1 lb of ground pork
1/4 cup of chili oil
2 tbsp of Szechuan peppercorns, toasted and ground
2 tbsp of soy sauce
2 tbsp of tahini
2 tbsp of sesame paste
2 tbsp of peanut butter
2 tbsp of sugar
2 tbsp of rice vinegar
2 cloves of garlic, minced
1 tbsp of ginger, minced
2 green onions, thinly sliced
Sesame seeds, for garnish
Instructions:
Cook the noodles according to package instructions and then drain and rinse with cold water.
In a large skillet, cook the ground pork over medium-high heat until browned. Drain off any excess fat.
In a small bowl, whisk together the chili oil, Szechuan peppercorns, soy sauce, tahini, sesame paste, peanut butter, sugar, and rice vinegar.
Add the garlic and ginger to the skillet with the pork and cook for 1-2 minutes.
Pour the sauce over the pork and stir to combine.
Divide the noodles among four bowls and top with the pork mixture.
Garnish with sliced green onions and sesame seeds.
