Ingredients:
1 lb beets, peeled and grated
1 onion, finely diced
2 cloves of garlic, minced
1 cup of kubbeh (dough made from semolina flour and ground beef)
4 cups of beef or chicken broth
2 tbsp olive oil
Salt and pepper, to taste
Fresh parsley or cilantro, for garnish
Instructions
In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, sauté until softened.
Add grated beets to the pot and stir to combine with onions and garlic. Cook for a few minutes, until the beets start to soften.
Pour in beef or chicken broth, bring the mixture to a boil and then reduce to a simmer.
Form the kubbeh dough into small balls and gently drop them into the pot of soup.
Cover and simmer for 30 minutes, or until the kubbeh is cooked through.
Season with salt and pepper to taste.
Serve hot, garnished with fresh parsley or cilantro.
