Ingredients:
1 lb okra, sliced
1 lb meat (beef, goat or chicken)
2 cups of seafood or fish
2 cups diced tomatoes
2 cups of beef or chicken broth
2 cups water
1 cup diced onions
1 cup diced pepper (red and green)
1/2 cup ground crayfish
2 tbsp vegetable oil
2 tsp ground cumin
2 tsp smoked paprika
2 tsp curry powder
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
2 bay leaves
Instructions
In a large pot or Dutch oven, heat the oil over medium heat. Add the onions, pepper and meat or fish and cook until the meat is browned.
Stir in the sliced okra, canned tomatoes, beef or chicken broth, water, diced onions, pepper, ground crayfish, cumin, smoked paprika, curry powder, thyme, salt, black pepper, and cayenne pepper.
Add the bay leaves and bring the mixture to a boil.
Reduce the heat to low, cover and simmer for 30 minutes.
Remove from the heat and let stand, covered, for 10 minutes.
Serve Okra soup hot, garnished with additional herbs and scallions if desired.
