Ingredients:
8 oz rice noodles (bihon)
1 lb chicken, sliced
1/2 lb shrimp, peeled and deveined
1/4 cup soy sauce
1/4 cup oyster sauce
2 cloves of garlic, minced
1 onion, sliced
2 cups of sliced vegetables (such as carrots, cabbage, and bell peppers)
2 cups of chicken broth
2 tbsp oil
Salt and pepper to taste
Instructions:
Soak the rice noodles in warm water for 10 minutes. Drain and set aside.
In a pan, heat the oil over medium heat. Add the garlic and onion and sauté until fragrant.
Add the chicken and shrimp, and cook until they are no longer pink.
Add the soy sauce, oyster sauce, and chicken broth. Bring to a boil.
Add the vegetables and cook until they are tender.
Add the noodles and toss to combine. Cook until the noodles are tender and the liquid has been absorbed.
Season with salt and pepper to taste.
Serve hot, garnished with chopped green onions and lemon wedges if desired.
