Ingredients:
8 slices of dense, dark rye bread
1/2 cup (1 stick) unsalted butter, at room temperature
1/2 lb smoked salmon
1/2 cup crème fraîche
1/4 cup chopped dill
2 tbsp chopped chives
1 tbsp lemon juice
Salt and pepper, to taste
8 small bunches of watercress or other small greens
1 small red onion, thinly sliced
Caviar, for garnish
Instructions:
Spread the butter evenly on one side of each slice of bread.
In a small bowl, mix together the crème fraîche, dill, chives, lemon juice, salt and pepper.
Place a slice of bread, buttered side up, on each of 8 plates.
Top each slice of bread with a few bunches of watercress or other small greens.
Place a few slices of red onion on top of the greens.
Carefully lay 2 or 3 slices of smoked salmon on top of the onions.
Spoon the crème fraîche mixture over the salmon.
Garnish each sandwich with a small spoonful of caviar.
Serve immediately.
