Ingredients:
2 tablespoons vegetable oil
1 onion, chopped
2 cloves of garlic, minced
2 cups chicken broth
1 cup molokhia leaves, finely chopped
1 pound boneless chicken or rabbit, cut into bite-sized pieces
1 teaspoon ground cumin
Salt and pepper, to taste
Lemon wedges, for serving
Instructions
In a large pot or Dutch oven, heat the oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
Add the garlic and sauté for an additional minute.
Add the chicken broth, molokhia leaves, chicken or rabbit, cumin, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and simmer until the chicken or rabbit is cooked through, about 20-25 minutes.
Serve the molokhia with lemon wedges on the side.
