Ingredients:
1 cup of fine bulgur wheat
3 cups of finely chopped parsley
1 cup of finely diced tomatoes
1/2 cup of finely diced onions
1/4 cup of chopped fresh mint
1/4 cup of lemon juice
1/4 cup of olive oil
1 tsp ground cumin
Salt and pepper to taste
Instructions
Rinse bulgur wheat in a fine mesh strainer and drain well.
In a large mixing bowl, combine the bulgur wheat, parsley, tomatoes, onions, and mint.
In a small bowl, mix together the lemon juice, olive oil, cumin, salt, and pepper.
Pour the dressing over the bulgur wheat mixture and toss well to combine.
Allow the Tabbouleh to sit for at least 30 minutes to allow the flavors to meld together.
Serve chilled or at room temperature, as a side dish or as a salad.
