Ingredients:
For the dough:
1 1/2 cups all-purpose flour
1/2 cup butter, at room temperature
1 egg yolk
1/4 cup sour cream
1/4 tsp salt
For the filling:
1 large pork sausage
1 head sauerkraut, rinsed and drained
1/2 cup diced bacon
1/2 cup diced onion
1/4 cup butter
1/4 cup all-purpose flour
1 cup beef broth
1/2 cup sour cream
1 egg yolk, beaten
Mustard, for serving

To make the dough, in a large mixing bowl, combine the flour, butter, egg yolk, sour cream, and salt. Mix well until a soft dough forms.
Knead the dough on a floured surface for about 2-3 minutes, then wrap it in plastic wrap and refrigerate for at least 30 minutes.
To make the filling, in a large skillet, sauté the bacon and onion in the butter until the bacon is crispy and the onion is softened.
Stir in the flour and beef broth, and cook until the mixture thickens.
Stir in the sauerkraut, and cook for an additional 5 minutes. Remove from heat and stir in the sour cream.
Preheat the oven to 375F (190C)
Roll out the dough on a floured surface to about 1/4 inch thickness.
Place the sausage in the center of the dough, and spoon the sauerkraut mixture over the top of the sausage.
Roll up the dough to enclose the sausage and sauerkraut, sealing the edges.
Brush the top of the pastry with the beaten egg yolk.
Place the Párkovačka on a baking sheet and bake for 25-30 minutes or until the pastry is golden brown and cooked through.
Remove from the oven and let it cool for a few minutes before slicing.
Serve the Párkovačka with a side of mustard.
