Ingredients:
1 lb of ground beef
1 chorizo sausage, sliced
1 cup of white rice
1 cup of red beans, cooked
2 ripe plantains, sliced and fried
1 avocado, sliced
2 fried eggs
2 arepas
4 tbsp of olive oil
Salt and pepper to taste
2 cloves of garlic, minced
1/4 cup of cilantro, chopped
1/4 cup of sour cream
1/4 cup of guacamole
1/4 cup of salsa
Instructions:
Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the ground beef and cook until browned, about 10 minutes. Season with salt and pepper to taste.
In the same skillet, add the chorizo and cook until browned, about 5 minutes.
Cook the rice according to the package instructions. Once cooked, stir in the garlic, cilantro, and 1 tablespoon of olive oil.
In a separate skillet, fry the plantains in the remaining olive oil until golden brown.
Fry the eggs sunny side up or over-easy.
Assemble the Bandeja Paisa by placing the rice in the center of a large platter. Arrange the beef, chorizo, beans, plantains, avocado, fried eggs, and arepas around the rice.
Garnish with sour cream, guacamole, and salsa.
