South African: Bobotie
Ingredients:
2 tablespoons vegetable oil
1 large onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground nutmeg
Salt and pepper, to taste
1 pound ground beef or lamb
1 cup beef or chicken stock
1/2 cup raisins or chopped apricots (optional)
1/4 cup slivered almonds (optional)
1/4 cup chopped fresh cilantro (optional)
2 eggs
1 cup milk
1/4 cup breadcrumbs
Instructions
Preheat the oven to 350°F.
Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the cumin, coriander, turmeric, cinnamon, ginger, nutmeg, salt, and pepper and cook for 1-2 minutes, until fragrant.
Add the ground beef or lamb and cook until browned, about 10 minutes.
Stir in the stock, raisins or apricots, almonds, and cilantro. Bring to a simmer and cook for 5 minutes.
In a small bowl, whisk together the eggs and milk. Pour over the beef mixture and sprinkle with breadcrumbs.
Bake for 25-30 minutes, until golden brown and set. Let cool for a few minutes before serving.
