Ingredients (Kolache):
1 package active dry yeast
1/4 cup warm water (110-115F)
1/2 cup sugar
1/2 cup butter, at room temperature
2 eggs
1/2 cup sour cream
1 tsp salt
4 cups all-purpose flour
Poppy Seed filling
Instructions:
In a small bowl, combine the yeast and warm water. Let it sit for 5 minutes until the mixture becomes foamy.
In a large mixing bowl, cream together the sugar and butter. Add the eggs, sour cream, salt, and yeast mixture to the bowl and mix well.
Gradually add the flour to the bowl, mixing until a soft dough forms.
Knead the dough on a floured surface for about 8-10 minutes, until it becomes smooth and elastic.
Place the dough in a greased bowl, cover it with a towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
Once the dough has risen, punch it down and divide it into 12-24 portions depending on the size you want for your kolaches.
Roll each portion of dough into a circle and place about 2 tablespoons of filling in the center of each circle.
Fold the edges of the dough over the filling and pinch them together to seal the kolache.
Place the kolaches on a greased baking sheet and let them rise for another 20-30 minutes.
Preheat the oven to 350F (175C) and bake the kolaches for 20-25 minutes, or until they are golden brown.
Remove from the oven and let them cool on a wire rack.
