Ingredients (Dough):
3 cups of all-purpose flour
1 package of active dry yeast
1 tsp of sugar
1 tsp of salt
1 cup of warm water
1/4 cup of olive oil
Ingredients (Pide Toppings):
1/4 cup of tomato sauce
1/4 cup of ground beef or lamb
1/4 cup of diced onions
1/4 cup of diced tomatoes
1/4 cup of sliced black olives
1/4 cup of crumbled feta cheese
1 tsp of dried oregano
1 tsp of dried thyme
Salt and pepper, to taste
2 tbsp of olive oil
1 egg, beaten (optional, for egg wash)
Instructions (Pide):
In a large mixing bowl, combine the flour, yeast, sugar, and salt.
Slowly add the warm water and olive oil, and mix until a dough forms.
Knead the dough for about 10 minutes, or until it becomes smooth and elastic.
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Once the dough has risen, punch it down and knead it again for a few minutes.
Divide the dough into 4-6 equal portions and shape them into oval or boat-shaped forms.
Place the dough on a greased baking sheet or pizza stone.
This dough gives the Pide a crispy crust and a soft and fluffy interior. This dough needs to rise before shaping it and adding the toppings, so it requires a little bit of time but it's worth it. This dough is the base of the traditional Turkish Pide, you can also use it for other type of Turkish bread as well.
Instructions
Preheat the oven to 425 degrees F (220 degrees C).
Spread the tomato sauce over the dough, leaving a 1-inch border around the edges.
Spread the ground meat, onions, tomatoes, and olives over the tomato sauce.
Sprinkle the feta cheese, oregano, thyme, salt and pepper over the toppings.
Brush the edges of the dough with the beaten egg (if using)
Drizzle the olive oil over the toppings.
Bake for 15-20 minutes or until the crust is golden brown and the toppings are hot and bubbly.
Remove from the oven and let it cool for a few minutes before slicing and serving.
