Ingredients:
1 lb. of lean ground beef
1/4 cup of niter kibbeh (Ethiopian spiced clarified butter)
2 cloves of minced garlic
2 tbsp of berbere spice mix
1 tbsp of mitmita (Ethiopian chili powder)
Salt and pepper to taste
2 tbsp of chopped fresh parsley
1 tbsp of chopped fresh cilantro
1 tbsp of chopped fresh mint
Injera, for serving
Instructions
In a large bowl, mix together the ground beef, niter kibbeh, garlic, berbere spice mix, mitmita, salt and pepper.
Knead the mixture with your hands until it is well combined.
Form the mixture into small patties or balls.
Heat a large skillet over medium-high heat. Add the patties or balls and cook for 2-3 minutes per side, or until cooked through.
Remove the patties or balls from the skillet and let them rest for a few minutes.
Serve the kitfo on a plate, garnished with parsley, cilantro, and mint and serve with injera on the side.
Note: This recipe is designed for a special occasion and is a deluxe version of traditional kitfo recipe. The original recipe usually serves with a pureed cottage cheese, called ayib, and it is not cooked.
