Ingredients:
1 lb of callaloo or spinach leaves, washed and chopped
1 small onion, chopped
2 cloves of garlic, minced
1/2 teaspoon of thyme
1/2 teaspoon of black pepper
1/4 teaspoon of nutmeg
1/4 teaspoon of allspice
2 tablespoons of oil
1 cup of chicken broth or water
Salt, to taste
Optional: diced ham, bacon, or saltfish
Instructions:
In a large pot, heat the oil over medium heat.
Add the onion and garlic and cook until softened, about 5 minutes.
Stir in the thyme, black pepper, nutmeg, and allspice.
Add the chopped callaloo or spinach leaves and cook until wilted, about 5 minutes.
Stir in the diced ham, bacon, or saltfish, if using.
Pour in the chicken broth or water, bring to a boil, then reduce heat to low and cover the pot.
Let the chalaloo simmer until the greens are tender, about 15 minutes.
Season with salt to taste. Serve hot as a side dish or over rice. Enjoy!
