Ingredients:
8 oz. dried la mian noodles
1 lb. large raw shrimp, peeled and deveined
1 tbsp. vegetable oil
1 large onion, sliced
4 cloves garlic, minced
2 tbsp. light soy sauce
2 tbsp. dry sherry
2 tsp. sugar
1 tsp. sesame oil
Salt and pepper to taste
1 scallion, sliced
1 tbsp. chopped cilantro
2 tbsp. toasted sesame seeds
Instructions:
Cook the la mian noodles in a pot of boiling water for 3-4 minutes, or until tender. Drain and rinse under cold water to stop the cooking process.
Heat the vegetable oil in a large wok over high heat. Add the onion and garlic and stir-fry for 2 minutes, or until softened.
Add the shrimp and continue to stir-fry for another 2-3 minutes, or until the shrimp are pink and just cooked through.
Add the light soy sauce, dry sherry, sugar, and sesame oil to the wok and stir to combine. Season with salt and pepper to taste.
Divide the noodles among four bowls and top each with a portion of the shrimp mixture.
Garnish each bowl with the scallion, cilantro, and toasted sesame seeds. Serve immediately.
