Ingredients:
1 lb dried fava beans
4 cloves of garlic, minced
1 tsp cumin powder
2 tbsp olive oil
juice of 1 lemon
salt and pepper to taste
Optional toppings: chopped tomatoes, parsley, diced onions, and a drizzle of olive oil.
Instructions
Soak the fava beans overnight in a large bowl of water.
Drain and rinse the beans, then place them in a large pot with enough water to cover them by 2 inches. Bring to a boil, then reduce the heat and simmer for 1-2 hours, or until the beans are soft and tender.
Drain the beans and reserve the cooking liquid.
Mash the beans with a fork or potato masher until they are smooth.
In a pan, heat the olive oil over medium heat. Add the garlic and cumin powder and cook for 1-2 minutes until fragrant.
Stir in the mashed fava beans and enough of the reserved cooking liquid to make a thick, creamy consistency.
Stir in the lemon juice and season with salt and pepper to taste.
Serve the ful medames hot, topped with chopped tomatoes, parsley, diced onions, and a drizzle of olive oil.
